Chocolate White Chocolate Chip Cookies



Again with the chocolate. I know. I have a problem. But it is such a delicious problem. It's double chocolate. Chocolate cookies with white chocolate chips... oh my! I'll take chocolate in nearly every concoction conceivable. I search for chocolate recipes to try. This one here though, I didn't have to search for. This recipe I bought and brought right into my home. Years ago, this recipe used to be on the back of Nestle's white chocolate chips, but then they replaced it. It was so good that I searched for it so that I could make them again. Here's Nestle's recipe: White Chip Chocolate Cookies. These cookies are amazing. They are so soft and the texture is almost like a brownie, but the white chocolate add a wonderful flavor. The only improvement I made to the original recipe is some instant espresso to intensify the chocolate flavor.

2 1/4 cups all-purpose flour
2/3 cup cocoa
1 teaspoon baking soda
1/2-1 tsp instant espresso
1/4 teaspoon salt
1 cup (2 sticks) butter or margarine, softened
3/4 cup granulated sugar
2/3 cup packed brown sugar
1 teaspoon vanilla extract
2 large eggs
12-oz. pkg. white chocolate chips



Preheat oven to 350 degrees. In a small bowl combine flour, cocoa, baking soda, espresso, and salt.



Beat butter, granulated sugar, and brown sugar in large mixer bowl until creamy.



Add eggs and vanilla extract; mix well.



Gradually beat in flour mixture.



Stir in morsels.



Use a 1-inch or 1.5-inch cookie scoop to portion cookies onto a parchment-lined cookie sheet.



Bake for 9 to 11 minutes or until centers are just set. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely. These cookies will be very soft for a while, but they set more as the cool, so do not overcook them.

Pumpkin Oatmeal Cranberry Cookies


It's that time of year again. Fall, crisp cool mornings, sweaters and hoodies, and all things pumpkin and spice. While in Walmart a few weeks ago, I saw a bag for Pumpkin Spice Morsels. What the heck is this, I thought. I don't know what I'm going to use these in, but I just knew I had to have them. Then I came across this recipe that I saved last year to try for Pumpkin Oatmeal Cookies. I altered the recipe just a bit and made it my own. I much prefer cranberries over cherries, and I used the morsels I had found at Walmart. I love all of the spices in this cookies too. I got really positive feedback at work when I took these in, so I decided to share it with you!

2 cups all purpose flour
1 1/2 cups old-fashioned oats
1 tsp baking soda
1 1/2 tsp ground cinnamon
1 tsp pumpkin pie spice
1/2 tsp salt
1 cup (2 sticks) butter; softened
1 cup packed light brown sugar
1 cup granulated sugar
1 cup pure pumpkin puree
1 large egg
1 tsp vanilla extract
6 oz white chocolate chips
6 oz pumpkin spice chips
1 cup dried cranberries


Preheat oven to 350 degrees F. Line baking sheet with a silicone mat or parchment paper.

Combine flour, oats, baking soda, cinnamon, pumpkin pie spice and salt in medium bowl.

 
Beat butter, brown sugar and granulated sugar in large mixer bowl until light and fluffy.


Add pumpkin, egg and vanilla extract; mix well.

 
Add flour mixture; combine until all ingredients are incorporated.

 
Fold in white chocolate chips and cranberries.


Drop by rounded tablespoons onto prepared baking sheets.


Bake for 11-14 minutes or until cookies are lightly browned at the edges. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

Oatmeal Cranberry Cookies


I have become a cranberry convert this past year. I love cranberries. I also love oatmeal in cookies - oatmeal raisin, no bake chocolate oatmeal, etc. I also love white chocolate, and I've been fascinated with using cinnamon chips. Soooo... why don't we combine all of that together into a cookie? Can there be anything wrong with that? Well, I'm here to tell you that there is in fact nothing at all wrong with that. These cookies are freaking awesome! I start them the same as the old Quaker Oatmeal Raisin recipe, and then I take a hard left. 

1 cup butter
1 cup brown sugar, firmly packed
1/2 cup sugar
2 eggs, at room temperature
1 tsp vanilla extract
1 1/2 cup all-purpose flour
1 tsp baking soda
1 tsp cinnamon, heaping
1/2 tsp salt
3 cups oats
1 1/2 cups dried sweetened cranberries
12 ounces white chocolate chips
6 ounces cinnamon chips (half a bag)


Combine flour, baking soda, salt, and cinnamon in a bowl and whisk together. Beat together butter and sugars until creamy.


Add eggs and vanilla extract, and blend until combined.


Add flour mixture, and blend until incorporated. Mix in the oatmeal, cranberries, white chocolate chips, and cinnamon chips.


Heap by rounded teaspoon full, or medium cookie scoop if you have one, onto parchment lined cookie baking sheet.



Bake cookies at 350 degrees Fahrenheit for 9-12 minutes until cookies begin to turn golden brown. Cookies will continue to cook and set after being removed from the oven, so do not overcook. Allow cookies to rest on the pan for 3-5 minutes, and then remove to a wire rack to completely cool.

Triple Chocolate Cranberry Cookies


Today I thought and thought about what goodies I was going to bake for "Monday treat" at work, and I just kept coming up blank. So, I raided my pantry and looked to see what I had. I took mental note of a few of the ingredients, and then searched the web for recipes. That's when I found White and Dark Chocolate Cranberry Almond Cookies. It sounded good, so I decided that's what I would try. Oh. My. Gosh. Best decision I ever made! lol I did adapt the recipe a bit from hers, and the results are amazing! The cookie is so soft. The mix of chocolates is divine, and the cranberry adds just a hint of fruity sweetness. You've got to give this recipe a try. 

1 cup butter or margarine
3/4 cup sugar
1 1/4 cups dark brown sugar
1 Tbsp vanilla
2 eggs
3 cups all-purpose flour
2 tsp baking soda
2 tsp cornstarch
1 tsp salt
6-8 ounces white chocolate chips (to taste, these are sweeter and the more you use the sweeter the cookie becomes)
6 ounces dark chocolate chips
6 ounces semi-sweet chocolate chips
4 ounces dried cranberries
1 cup nuts (optional)



In a small bowl, whisk flour, baking soda, cornstarch and salt; set aside. In large bowl or stand mixer, beat butter and sugars until smooth.


Add vanilla and eggs and mix well. Add flour mixture, and stir until combined. Add chocolate and cranberries.


Drop by rounded teaspoon onto baking sheet. Bake at 375 degrees for 8-10 minutes. Cool on tray for a minute or two, then transfer to cooling rack.

Coconut Lime White Chocolate Chip Cookies


I'm working at being more adventurous, both in my personal life and in my palate. Oftentimes I don't succeed, but every once in a while I do. This recipe was a success! Of course, I found this one on Pinterest: Lime and Coconut Cookies with White Chocolate Chips, and with all the cold weather we've had this winter, I thought it would be a nice recipe to liven up my family and coworkers with some summer flavors. It worked. The cookies have a very mild lime flavor, and the coconut doesn't detract from the texture of the cookie. The white chocolate chips just melt in your mouth and blend it all together in a wonderful little cookie.

2 2/3 cups all purpose flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 cup (2 sticks) unsalted butter, at room temperature
1 1/2 cups granulated sugar
1 egg
1/2 tsp pure vanilla extract
zest of one large lime
3 Tbsp fresh lime juice (I used two smaller limes)
1/2 cup toasted coconut
1 cup white chocolate chips
1/2 cup sugar for rolling cookies


Preheat oven to 350 degrees F. Line cookie sheet with parchment paper. Toast coconut until lightly brown and fragrant (5-7 minutes). Zest and juice the lime.


In small bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside. In large bowl, beat together the butter and sugar until smooth, about 3 minutes. 


Add in the egg, vanilla extract, lime juice and lime zest, and beat until well combined. 


Add in the dry ingredients and mix until combined.


Lastly, fold in the toasted coconut and white chocolate chips and mix until evenly distributed. Roll rounded spoonfuls of cookie dough into balls and roll in sugar. 


Bake cookies 8-10 minutes, or until lightly browned. The cookies will look slightly cracked. Let the cookies rest on cookie sheet for three minutes, then move them onto a cooling rack.

Make-Your-Way Chocolate Chip Cookies


I will always love Nestle Toll House Chocolate Chip Cookies. I grew up making those with my dad, and they will always be special to me. But I have found THE PERFECT chocolate chip cookie recipe...  Triple Chocolate Chip Cookie Recipe, on Pinterest, of course. I saw the picture, and they looked so good I followed it and read the blog. I decided to give it a try, and I've since made three versions of the cookies. I made one batch with triple chocolate chips - white, semi-sweet, and dark, one with all white, and one with all dark. They were all absolutely amazing. This is important enough to repeat... absolutely freakin' amazing! None of the batches lasted long, and I have a few other plans for this cookie as well. Following is the recipe from the blog for the triple chocolate chips. Substitute whatever chips you prefer, and I'm sure they will come out fantastic.

3/4 cup (1.5 sticks) unsalted butter, softened to room temperature
3/4 cup dark brown sugar (or light brown - dark is preferred)
1/4 cup granulated sugar
1 large egg, at room temperature
2 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoon cornstarch
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup semi-sweet chocolate chips
1/2 cup white chocolate chips
1/2 cup SNO-CAPS (or other kind of chocolate chip)




In a large bowl using a hand-held mixer or stand mixer with paddle attachment, cream the butter and sugars together on medium speed until fluffy and light in color. 





Mix in egg and vanilla. Scrape down the sides as needed. 









On low speed, mix in flour, cornstarch, baking soda and salt. Stir in chocolate chips. Dough will be thick and sticky. Chill for at least 30 minutes (or up to 3 days).


Preheat oven to 350F. The original blog suggests lining the ungreased cookie sheet with parchment paper or silicone baking mat. I did not do this. Drop balls of dough onto cookie sheet (about 1.5 Tablespoons of dough per cookie) OR used a standard-sized cookie scoop. Press a few chocolate chips onto the tops of cookies for looks, if desired. Bake for 8-9 minutes, until barely golden brown around the edges. Do NOT bake them longer than 10 minutes. Remove and let cool for 3 minutes on the cookie sheet. If the cookies are too puffy, try gently pressing down on them with the back of a spoon. Transfer to cooling rack. Cookies remain fresh in an airtight container for up to 7 days.
